Purslane is a salad vegetable that more people should know about. This variety is called Golden Purslane and produces abundant, thick, crisp, yellow-green leaves. The taste is fresh, slightly sour, and the leaves can be used both raw in salads or cooked, for example in soups or stir-fries.
In addition to being tasty, purslane contains a lot of omega-3 and is rich in vitamins A and C. You can easily grow it outdoors, but it also does well as a potted plant indoors. The plant grows to about 25–35 cm high and is planted out only when the risk of frost has passed.
